  1. Preheat the oven to 190 degrees C. (375 degrees F)
  2. Cream the butter and sugar well with a wooden spoon. Add the beaten egg and vanilla essence and beat until smooth.
  3. Add the flour and cocoa, and the chopped nuts, if using.
  4. Mix thoroughly, then stir in the chocolate.
  5. Drop small spoonfuls onto a greased cookie tray, leaving room for them to spread, and bake for 10 minutes.
  6. Leave to cool on a wire rack.
  7. Store in an airtight container.
